Sourdough Discard Pizza Dough

Ingredients:

  • 250g Wheat Flour
  • 250g Bread Flour (or All Purpose)
  • 10g Salt
  • 30g Olive Oil
  • 325g Water
  • 100g Sourdough Starter

Instructions:

  1. Combine ingredients in a large mixing bowl. Stir with a spoon and then mix with wet hands. Cover and let sit out overnight.
  2. In the morning, stretch and fold the dough with wet hands. cover and refrigerate for at least 8hrs and up to 36hrs. (Ok to skip the fridge, but it tastes better having chilled for a few hours)
  3. Remove from the fridge and set it out for 30mins. Then divide the dough into 4 equal parts. Shape each part into a ball on a floured surface. Cover with a tea towel for another 30mins.
  4. Turn on broiler and warm up a cast iron skillet over medium heat. Ok to lightly oil if desired.
  5. Press dough ball into 8″ circle with floured hands and surface.
  6. When the skillet is ready, lay the crust in and spread it out with your fingers. Immediately add your sauce and toppings. Cook around 5mins until the crust starts to char or get crispy.
  7. Move the skillet to the broiler oven to finish off the toppings for 2-4mins or until the cheese is melted as you like and the crust is golden on the edges.
