Potato Soup

Ingredients:

  • 2 Bags Frozen Hash Browns
  • 2 cans cream of chicken soup (*Alternatively make vegan cream of chicken soup)
  • 80oz Containers of chicken broth
  • 1Tbsp onion powder
  • 2 blocks cream cheese Or Kitehill Cream Chz alternative

Instructions:

Simmer all ingredients except cream cheese. Add cream cheese about 30-60mins before serving. Right before serving use immersion blender to cream soup.

Serve with shredded cheese, bacon bits, sour cream, dinner rolls.

*Alternative (Vegan) Cream of Chicken Soup:

  • 6Tbsp Butter
  • 2Tbsp Flour
  • 1C Almond Milk
  • 1C Chicken or Vegetable Broth

Melt the butter in a saucepan over medium heat. Add flour and whisk until smooth. Next add almond milk and broth gradually. Bring to a boil and continue whisking for 2 minutes. Add this mixture to the soup. Feel free to salt and pepper if desired.
