I found this recipe at https://www.aheadofthyme.com/roasted-butternut-squash/ and just tried it this year. It was great! We just get the butternut squash pre-cut at Costco.
- butternut squash – one medium head butternut squash peeled and cubed into 1-inch pieces (about 5-6 cups).
- olive oil
- rosemary – I used dried rosemary buy you can also substitute with fresh if you prefer.
- salt and pepper
Toss the cubes squash in some olive oil, enough to coat it.
Spread it out on a baking pan and place in a 425 preheated oven. Roast for 25-30 minutes under tender. Serve with a sprinkle of parsley on top.
