Nammy’s Potato Salad

Ingredients:

  • 7lbs Potatoes
  • 4 Hard Boiled Eggs
  • 1C Sweet Relish or chopped sweet Gherkins
  • 1C Mayonnaise
  • 1C Yellow Mustard
  • 3Tbs Apple Cider Vinegar
  • 3tsp Salt
  • 3tsp Pepper

Instructions:

  1. Hard boil eggs and let cool.
  2. Peel, cut, and boil potatoes. Refrigerate when soft.
  3. Mix mayo, mustard, and vinegar. Pour over potatoes in a large mixing bowl.
  4. Fold the rest of the ingredients in and refrigerate overnight. Tastes better the next day after getting happy in the fridge!
