Simmer all ingredients except cream cheese. Add cream cheese about 30-60mins before serving. Right before serving use immersion blender to cream soup. Serve with shredded cheese, bacon bits, sour cream, dinner rolls.

Potato Disks

5lbs Potatoes 2 Tbsp Olive Oil 1/2 tsp Salt 1/4 tsp Pepper 1/2 tsp Garlic Salt Preheat oven to 450. Peel potatoes & slice into disks. Drizzle with olive oil & season in a large mixing bowl. Cook on metal baking sheets for 25mins, flip & cook another 15mins.
